Abstract

A liquid food seasoning, e.g. for use with sausage and other chopped meats, is prepared by dissolving in glacial acetic acid essential oils such as oil of almonds, bay, cloves, cardamom, carvol, ginger, mace, nutmeg, marjoram, spice, sage, thyme, pepper or pimento or oleo resins of the oils or derivatives of the oils and oleo resins, or mixtures of the oils, oleo resins and derivatives, and then diluting with vinegar, water or dilute acetic acid. Tomato pulp or the product obtained by boiling tomatoes in water may be added to the seasoning preparation. In one example, a mixture of oil of pepper or capsicine and the oils of thyme, clove and sage is used, and in another a mixture of capsicine, thymol and eugenol; colouring matter may also be added in each case. The ingredients may be treated to remove constituents insoluble in glacial acetic acid or immiscible with water after the liquid seasoning has been well shaken.
