Abstract

Soya beans or other leguminose containing acrid tasting bodies and pigmented substances, are immersed in an aqueous solution of sulphur dioxide for a period of time sufficient to effect a thorough penetration of the tissues of the material and to expand the material, a moderate heat being applied thereafter to liberate the sulphur dioxide from the solution in the tissues and to drive off any excess of sulphur dioxide. The soya beans may be treated whole or in broken, sliced, cracked or crushed form and are preferably employed in the dried state. In a specific example dried and broken soya beans are soaked in a very weak solution of sulphur dioxide for about ten hours; the beans are then subjected to a temperature of 60-80 DEG C. for twenty to thirty minutes and then to a temperature of 100 DEG C. for one to four minutes. The treated beans may be ground to flour. Specifications 1528/88, 20930/93, 21971/98, 110,364, 285,859, [all in Class 58, Grain &c.], and 344,538 are referred to.
