368,365. Making meat tender. TRIGGS, W. W., 57, Lincoln's Inn Fields, London. (Pike Manufacturing Co. ; Pike, New Hampshire, U.S.A.) Nov. 29, 1930, No. 36068. [Class 28 (ii).] Apparatus for making meat tender comprises a platen, a manually operated device for forcing cutter blades through the meat into contact with the platen, and a stripper arranged to remove the meat from the blades when the latter are moved upwardly, the blades being adjustably mounted so that they may be aligned with the platen. A base 10 has a recessed part 12 to receive the removable wooden platen 11, the recessed part and platen being of square or other shape so that the platen may be turned through an angle in order that the meat may be cut in two or more directions. Thin knives 16 are removably bolted together with distance pieces between them to form a cutter block which is adjustably secured in a flanged support 14 by screws 37 and other screws provided with lock nuts. The knives 16 are slotted as shown to form narrow spaced blades 17, which are staggered so that the meat cannot be cut into separate pieces. A stripper frame 22 having cross-bars extending between the knives is pivoted on screws 23. It is normally held in raised position by a spring 27, the upward movement being limited by a stop 31 so that in its upper position the stripper forms a guard to prevent the operator's hand from engaging the edges of the blades 17. For adjusting the blades so that all engage the platen, the cutter support 14 is pivoted on an eccentric bushing adjustably mounted on a pin 44. The blades are forced through the meat by a compound lever mechanism comprising a bell-crank lever 55 pivoted on a fixed arm 57 and connected by toggle links 60 to the cutter support 14. The lever 55 has a removable weighted handle 66 which normally holds the support 14 in raised position. To compensate for wear, the effective length of the short arm 58 of the lever 55 may be varied by angularly adjusting the pin 59 connecting it with the links 60, the pin being provided with an enlarged eccentric part fitting within an aperture in the arm 58. The construction is such that the blades 17 cannot come into contact with the metal base if the wooden platen is absent.
