Abstract
In order to remove air from butter, margarine or other edible fats and thus improve the colour, texture and keeping qualities, the final stage of the manufacture consists in introducing the product in a solidified plastic condition into a mixing-machine and agitating under vacuum at normal temperature. Salt or water may be introduced into the mixing-machine. According to the Specification as open to inspection under Sect. 91 (3) (a) the mixing-machine is preferably of the rotating barrel type having fluted rollers within it, the cover of the machine being airtight and the interior of the barrel being connected to a vacuum pump through a valved pipe. The vacuum pipe is connected also to casings surrounding the shaft bearings to prevent lubricant from being sucked into the barrel. Alternatively the machine may be completely enclosed in an evacuated chamber. If desired, the vacuum may be cut off during the course of the working, carbon dioxide or other inert gas admitted, and the evacuation then resumed. In the manufacture of margarine, milk and other substances may be introduced into the mixing-machine.
