Abstract
Glycerine is added to the juice of citrus fruit, for example, orange, lemon, lime and grape fruit juice, to preserve the taste. One part of glycerine may be added to 8 parts of juice and the mixture kept under refrigeration for some time, for example 24 hours; 2-2 1/2 parts of sugar are then dissolved therein. The product can be kept indefinitely under relatively light refrigeration without loss of taste. Sodium benzoate or other preservatives may be added to prevent fermentation.
