Abstract

Finished and matured or partly matured cheese is reduced to a finely divided state and then has dehydrated or concentrated buttermilk added to it. The buttermilk may be concentrated by removing whey, which contains some of the lactose. Dried buttermilk may be mixed with water before being added to the cheese.
