Sterilizing milk &c.-In apparatus for the sterilization or like heat treatment of milk and other liquids in which heat is transferred from the liquid at one part of its course to the same liquid at another part of its course in a plurality of stages before and after the highest temperature point, provision is made for bye-passing one or more of the heat transfer stages during operation. The liquid may be subjected to separator, filtering or other treatment between the heat transfer stages. In the construction described, milk enters an open heat-exchanger 3 through connection 6, flows over its exterior, and is heated to about 45‹ C. by milk leaving the apparatus and flowing through the interior of the heat-exchanger. The milk collects in a channel 7 from which it flows through pipe 8 to a separator, filter, &c., 4 from which the treated milk passes to a tank 9 supplying a pump 5 which feeds it through pipe 10 to a heatexchanger 2 where it passes through tubes surrounded bv hot milk from the heater 1. The milk then flows to heater 1 where it is raised by steam to sterilizing temperature. The milk flows through pipe 12 provided with a thermometer 13 to heat-exchanger 2 and thence through tube 14 to heat-exchanger 3 which it leaves through pipe 15 to cooler 16. In the pipe connections, three-way cocks 17, 18, 19, 20 are provided to allow one or other of the heat-exchange stages to be cut out. The heater and heat-exchangers are supported by the same frame.
