Abstract

Cheese.-Cheese curd is pressed in a cheesepress hoop into a grease and moisture proof enclosure member or wrapping and then hermetically enclosed by placing an additional enclosure member or additional enclosure members over the unenclosed surface or surfaces and subjecting the whole to further pressure. The enclosure may be of such a nature as to remain on, and to be cut with, the cheese during the cutting thereof. As shown, the container consists of a body portion A, of a width to correspond with the height of the cheese and of a length to encircle it completely with an overlap at the ends, and end covers E, the edges of which are adapted to be slit and to be bent either up or down to lie against the cheese side and to be fixed there by a second pressing operation. Means, such as slots C and tongues B, which may be perforated, are provided for interlocking the ends of the portion A, and when the ends have been thus engaged the portion is placed within the cheese-press hoop and the cheese introduced thereinto for the first pressing. After this pressing, the cheese ends are dressed in the usual way and then the covers E are applied and the enclosure of the cheese eompleted. The portion A may have extensions D adapted to be turned in over the main part to reinforce the edges. The wrapping may consist of waxed paper or like sheet material, or light cardboard &c. rendered impervious to air and moisture.
