Abstract

Fish, dressing.-Fish to be sliced are guided through two pairs of spaced cutting members mounted one above the other, whereby longitudinal cuts are made on each side of the backbone, severance being completed by a third pair of cutting blades. A chain with lugs feeds the fish along the guide 1, and spring operated side centring means 2, 6 press against the sides of the fish. Springs 5 acting on levers 4 produce torsional effects in rods 3<c> which, through connecting bars 3b, tend to press inwards the guides 2. Final guides 6 have projections extending between the inner faces of the cutting discs to prevent the fins and tail from passing outside the blades. An auxiliary centring mechanism 9 for the fins and tail is pivoted above the guide, the ends extending between the inner faces of the cutters. The cutters consist of upper and lower pairs of rotary disc blades 10, 11, motor driven in a direction to drag the fish from the guide through the cutting mechanism, the blades being so spaced that the tail and fins can just pass between them. The fish is preferably on its back, tail foremost, the cutters being arranged so that the upper cutters 10 make a longitudinal double incision along the belly right and left of the medial plane almost to the backbone, and the lower cutters enter the back to make a similar double incision. Deflector plates 12, 13 with sharpened bevelled edges are arranged to strip the flesh from the backbone, final severance being effected by blades 15 working in slots 12d and 13<a> between the deflectors and plates 12<c>, 13<c>, Fig. 6. The flesh is directed into receptacles B, and the bones and tail fall from the severing blades 15 into another receptacle. A. A single motor drives the shafts for the two pairs of cutting discs and the severing blades, through sprocket wheel and chain connections.
