Dough - working machines; rolling-machines. -A portion of dough &c. is flattened into elongated shape, the front edge is folded back, the rear edge is stretched and straightened and the whole mass is then rolled up into a scroll. As shown in Fig. 7. the dough portion 1 is delivered by a timing-flap 92 to flattening-rolls 13 and passes thence to two pairs of transverselydisposed rolls 14, 15. The flattened sheet is delivered to a conveyer 22 and is carried beneath a pivoted folder 28 disposed between a pair of vertical rollers 30 which straighten the sides. Rolls 31, 33 flatten the fold and the dough passes to a further pair of convex rolls 61, 27 beyond which are a series of independent curlers 62, 63, 64 and a rolling-up device comprising three rolls 82 carried by a pivoted yoke 67. Gripper devices situated at each side of the conveyer 22 in advance of the roll 61 engage the rear end of the dough for stretching and straightening. Each gripper device comprises a member 38, Fig. 12, supported in proximity to the conveyer by a shaft 42 carried by arms 41 extending from a spindle 43 adapted to be rocked through 180‹, and associated with a pivoted member 39 urged downwardly by a spring 5 and retracted by cams 59, 60 extending from the arms 41. A chain 53 passing around a sprocket 54 on the shaft 42 and a fixed sprocket 51 preserves the orientation of the gripper. In action, the grippers move from a front position inwardly to the position shown in Fig. 12, where the members 39 are released and descend to grip the dough, which is thus drawn rearwardly and outwardly. The machine is driven from a motor 16, Fig. 7, driving a shaft 17 fitted with a sprocket 18 driving the conveyer 22 and rolls 13-15. A sprocket 19 drives' through a chain 90 a shaft 49 which operates the spindles 43 through crank mechanism 47-50 and bevel gears 44. A cam 89 on the shaft 49 rocks the frame 67 through levers 76, 72 and a second cam 91 actuates the flap 92 through a lever 95 and rod 97.
