Preserving fish, bacon, &c.-A house a for curing fish, bacon, &c., by smoking, having one or more exterior fireboxes g and means for controlling the passage of the combustion products from the fireboxes g to the house a, has a perforated metal plate d forming a dome, arch, &c. located beneath the roof b of the house a to divert condensed moisture towards the sides of the chamber and prevent it dropping on the food. The perforations may be formed in plate g by punching, their edges forming annular ridges on the upper side of the plate to ensure the matter condensed on this side passing to the sides of the house. In the construction described, the firebox g is connected by a passage h to the house a, a slidable damper i, Fig. 3, operated by a rod j regulating the supply of combustion products from the passage h. A perforated deflector plate h<1> is provided in the house a opposite the passage h. The combustion products leave the house a through a flue k, the inlet of which is at the base and is vertically adjustable, being locked in position by a bolt and wing-nut m engaging in a slot l therein. The upper end of the flue k leads to an outlet o which may be damper-controlled. An opening n controlled by a damper p is also provided in the inner wall of the flue k adjacent to the outlet o to permit the house to be cleared of the combustion products when desired.
