Cheese.-For the heat treatment of cheese, particularly cheese of the type which is moulded into segmental shape and wrapped in foil, the ground cheese mass, with desired additions thereto, is fed from the mixing vessel into a heated tube containing a plunger so that the cheese passes in a thin layer over a heated surface. In the apparatus shown, cheese passing out under pressure from a mixing vessel 1 is caused by a helicallygrooved pin or plunger 7 to travel in a thin layer along the hot inner wall of a double tube 3 having a space 4 for steam or other heating medium, the melted mass being extruded through a nozzle 8. The cheese is pressed into the tube 3 by a device such as a feed worm (not shown). The pin 7 may be hollow and connected up to a steam or hot-water circuit, and it may also be constructed as a rotatable screw adapted to feed the mass through the tube.
