262,239. Bollmann, H. Nov. 9, 1925. Cocoa preparations. - The solubility of cocoa powder is increased by the addition of a small . quantity, e.g. two per cent, of phosphatides derived from vegetable materials, especially soya beans. The phosphatides, e.g. lecithin, may first be mixed in a mill with a small quantity of cocoa powder which is then distributed through the main mass. The nourishing value of the treated cocoa is increased and the fat particles separate less readily from the liquid. The phosphatides used may be so purified that their phytosterol content is retained, e.g. by first adding water, if necessary, and then distilling under reduced pressure, after removing by centrifugal means the main quantity of the oil derived in their recovery from oil seeds.
