Abstract
A mineral salt composition comprises sodium chloride, potassium chloride and magnesium sulphate heptahydrate. The sodium chloride and potassium chloride may be present in the range of 35 to 45 wt % and the magnesium sulphate in the range 10 to 30 wt %. The magnesium sulphate may be Epsom salts and silicon dioxide may be present as an anti-caking agent.
Description
COMPOSITION
This invention relates to a novel composition, uses thereof and to methods of manufacture.
In particular, this invention relates to a novel salt composition, i.e. a table salt composition and to uses thereof.
Conventional table salt is sodium chloride. Low Sodium sea salts have been commercially available for a number of years. Such products generally comprise a mixture of sodium chloride and potassium chloride. More recently these compositions have also included magnesium salts, such as magnesium sulphate and magnesium chloride. Whilst such table salt preparations are satisfactory in the health benefits they provide, the magnesium sulphate is powdery rather than crystalline, e.g. particle or grain size of 100,um or less and therefore, if present in high dosages, can impart a powdery texture/taste to the product.
We have now found an improved table salt composition which utilises magnesium sulphate heptahydrate (MgSO4.7H2O).
Thus, according to the invention we provide a mineral salt composition comprising sodium chloride, potassium chloride and magnesium sulphate heptahydrate.
The mineral salt composition of the invention may be suitable for use as a table salt, a food additive or as a medicament.
The precise quantities in the composition may vary. However, preferably the weight percentage of sodium chloride present will be substantially the same as the weight percentage of the potassium chloride present. Thus, for example, the sodium chloride content of the composition may be from 35 to 45% w/w, preferably from 39 to 43% w/w and most preferably 41% w/w. Similarly, the potassium chloride content of the composition may be from 35 to 45% w/w, preferably from 39 to 43% w/w and most preferably 41% w/w.
The amount of magnesium sulphate heptahydrate present may also vary, but is substantially equivalent to 25% of the combined sodium and potassium chloride contents. Thus, the magnesium sulphate heptahydrate content may be from 10 to 30% w/w, preferably 15 to 20% w/w and especially 17% w/w.
The magnesium sulphate is preferably present as Epsom salts. Epsom salts can exist in a number of different crystalline forms, for example, monoclinic crystals or orthorhombic crystals. Preferably, the Epsom salt crystals are selected to be of a similar shape to those of the sodium and potassium chloride crystals. The size of the Epsom salt crystals may also vary. However, preferably, the particle or grain size of the Epsom salts will be substantially the same as that of the sodium and potassium chlorides, each of which will themselves be substantially similar. Thus in an especially preferred embodiment of the invention, each of the sodium chloride, potassium chloride and Epsom salt particles or grains will have a size, e.g. a diameter, in the range of from 100 1lm to 500,um, preferably from 250 Em to 500 m.
The composition of the invention may also include an anti-caking agent. A variety of such agents may be used, however, a preferred such agent is a silica, such as silicon dioxide. The amount of such an anti-caking agent may vary and may be from 0.1 to 3% w/w, preferably 0.5 to 2.0% w/w and especially 1% w/w.
Free moisture may be present in the composition. Thus, the free moisture content may be up to a maximum 0.5% w/w, preferably up to a maximum of 0. 2% w/w.
Other trace elements may also be included in the composition of the invention.
Examples of essential trace elements are V, Cr. Mn, Co, Cu. Zn, As, Mo and Se, the activity of which is known, but many other elements may also be essential.
According to a further aspect of the invention we provide a snack food, e. g. crisps, nuts, etc. flavoured with a composition of the invention.
We further provide a process for the manufacture of a composition which comprises dry mixing the ingredients.
The invention will now be described by way of example only.

Claims (27)
1. A mineral salt composition comprising sodium chloride, potassium chloride and magnesium sulphate heptahydrate. s
2. A mineral salt composition according to Claim 1 characterised in that the weight percentage of sodium chloride present is substantially the same as the weight percentage of the potassium chloride present
3. A mineral salt composition according to Claim 1 characterised in that the sodium chloride content of the composition is from 35 to 45% w/w.
4. A mineral salt composition according to Claim 3 characterised in that the sodium chloride content is from 39 to 43% w/w.
5. A mineral salt composition according to Claim 4 characterised in that the sodium chloride content is 41%.
6. A mineral salt composition according to Claim 1 characterised in that the potassium chloride content of the composition is from 35 to 45% w/w.
7. A mineral salt composition according to Claim 6 characterised in that the potassium chloride content is from 39 to 43% w/w.
8. A mineral salt composition according to Claim 1 characterised in that the potassium chloride content is 41% w/w.
9. A mineral salt composition according to Claim 1 characterised in that the amount of magnesium sulphate heptahydrate present is substantially equivalent to 25% of the combined sodium and potassium chloride contents.
10. A mineral salt composition according to Claim 9 characterised in that the magnesium sulphate heptahydrate content is from 10 to 30% w/w,.
11. A mineral salt composition according to Claim 1 characterised in that the magnesium sulphate heptahydrate content is from 15 to 20% w/w.
12. A mineral salt composition according to Claim 1 characterised in that the magnesium sulphate heptahydrate content is 17% w/w.
13. A mineral salt composition according to Claim 1 characterised in that the magnesium sulphate is present as Epsom salts.
14. A mineral salt composition according to Claim 13 characterised in that the, the Epsom salt crystals are selected to be of a similar shape to those of the sodium and potassium chloride crystals.
15. A mineral salt composition according to Claim 13 characterised in that the size of the Epsom salt crystals is substantially the same as that of the sodium and potassium chlorides, each of which will themselves be substantially similar.
16. A mineral salt composition according to Claim 15 characterised in that each of the sodium chloride, potassium chloride and Epsom salt particles or grains have a size in the range of from 100 Em to 500 1lm.
17. A mineral salt composition according to Claim 16 characterised in that each of the sodium chloride, potassium chloride and Epsom salt particles or grains will have a size in the range of from 250 Em to 500, um.
18. A mineral salt composition according to Claim 1 characterised in that the composition includes an anti-caking agent. s
19. A mineral salt composition according to Claim 1 characterised in that the anti-caking agent is a silica.
20. A mineral salt composition according to Claim 19 characterised in that the silica is silicon dioxide.
21. A mineral salt composition according to Claim 18 characterised in that the amount of anti-caking agent is from 0.1 to 3% w/w.
22. A mineral salt composition according to Claim 21 characterised in that the amount of anti-caking agent is from 0.5 to 2.0% w/w.
23. A mineral salt composition according to Claim 22 characterised in that the amount of anti-caking agent is 1 % w/w.
24. A mineral salt composition according to Claim 1 characterised in that the free moisture content is up to a maximum 0.5% w/w.
25. A mineral salt composition according to Claim 24 characterised in that the moisture free content is up to a maximum of 0.2% w/w.
26. A snack food, e.g. crisps, nuts, etc. flavoured with a mineral salt composition according to claim 1.
27. A composition substantially as described with reference to the accompanying
examples.
27. A process for the manufacture of a composition according to claim 1 which comprises dry mixing the ingredients.
28. A mineral salt composition according to Claim 1 characterised in that the composition comprises 41%w/w NaCI, 41%w/w KCI, 17%w/w MgSO.7H:O (as Epsom salts) and 1%w/w silicon dioxide.
29. A composition substantially as described with reference to the accompanying
examples.

Amendments to the claims have been filed as follows 1. A mineral salt composition comprising sodium chloride, potassium chloride and magnesium sulphate heptahydrate wherein the sodium chloride content is from 39 to 43% w/w.

A mineral salt composition according to Claim 1 characterised in that the weight percentage of sodium chloride present is substantially the same as the weight percentage of the potassium chloride present 3. A mineral salt composition according to Claim 1 characterised in that the sodium chloride content is 41%.
4. A mineral salt composition according to Claim 1 characterised in that the potassium chloride content of the composition is from 35 to 45% w/w.
5. A mineral salt composition according to Claim 4 characterised in that the potassium chloride content is from 39 to 43% w/w.
6. A mineral salt composition according to Claim 1 characterised in that the potassium chloride content is 41% w/w.
7. A mineral salt composition according to Claim 1 characterised in that the amount of magnesium sulphate heptahydrate present is substantially equivalent to 25% of the combined sodium and potassium chloride contents.
8. A mineral salt composition according to Claim 7 characterised in that the magnesium sulphate heptahydrate content is from 10 to 30% w/w,.

11. A mineral salt composition according to Claim 1 characterised in that the magnesium sulphate is present as Epsom salts.
12. A mineral salt composition according to Claim 11 characterised in that the, the Epsom salt crystals are selected to be of a similar shape to those of the sodium and potassium chloride crystals.
13. A mineral salt composition according to Claim 11 characterised in that the size of the Epsom salt crystals is substantially the same as that of the sodium and potassium chlorides, each of which will themselves be substantially similar.
14. A mineral salt composition according to Claim 13 characterised in that each of the sodium chloride, potassium chloride and Epsom salt particles or grains have a size in the range of from 100 1lm to 500 m.
15. A mineral salt composition according to Claim 14 characterised in that each of the sodium chloride, potassium chloride and Epsom salt particles or grains will have a size in the range of from 250 1lm to 500 1lm.
16. A mineral salt composition according to Claim 1 characterised in that the composition includes an anti-caking agent.
17. A mineral salt composition according to Claim 1 characterised in that the anti-caking agent is a silica.
18. A mineral salt composition according to Claim 17 characterised in that the silica is silicon dioxide.

21. A mineral salt composition according to Claim 20 characterized in that the amount of anti-caking agent is 1% w/w.
22. A mineral salt composition according to Claim 1 characterized in that the free moisture content is up to a maximum 0.5% w/w.
23. A mineral salt composition according to Claim 22 characterized in that the 1 S moisture free content is up to a maximum of 0.2% w/w.
24. A snack food, e.g. crisps, nuts, etc. flavoured with a mineral salt composition according to claim 1.
25. A process for the manufacture of a composition according to claim 1 which comprises dry mixing the ingredients.
26. A mineral salt composition according to Claim 1 characterized in that the composition comprises 41%w/w NaCI, 41%w/w KCI, 17%w/w MgS0.7H:O (as Epsom salts) and 1%w/w silicon dioxide.
