Abstract
The product is made up of a variety of speciality cheeses cut into bite-sized portions by cutting frames, forming the portions into groups each containing a collection of differing varieties, then weighing and packaging each group. The packaging involves gas flushing and vacuum packing.
Description
A NEW CHEESE PRODUCT
This invention relates to inventing a new function for cheese products.
Evidence suggests that the growth in the number of single person households and the gradual trend away from formal meal patterns has resulted in changes in customer profiles and buying habits. (Mintel Aug 94). A subsequent knock on effect of these changes has lead to increasing demands for food products which are functionally convenient, value added and healthy.
Cheese is sold in a commodity form. Its novel function as an addition to the growing pre-prepared salad market has not been developed to accomodate these changes.
The inventive step is made up of five parts: 1. The selection of speciality cheeses chosen on the following criteria;
cuttability (under manufacturing conditions), packability, price and customer
appeal (including colour and taste); 2. Cutting the cheeses into small bite-sized portions using specially designed cutting frames; 3. Combining cheese varieties before weighing. A purpose built weighing machine has been built for this procedure.
4. Weighed cheese packed to form part of a collection. The packaging step involves specific gas flushing and vacuum packing systems.
5. Individual cheeses previously sold separately have been developed into collections for unique positioning in salad counters of retail outlets.
Claims (6)
1. Speciality cheeses selected on the following criteria;
cuttability (under manufacturing conditions), packability, price and customer
appeal (including colour and taste);
2. Speciality cheeses as claimed in claim 1 cut into small bite-sized portions using specially designed cutting frames;
3. Speciality pre-cut cheeses as claimed in Claim 2 combined and weighed using a purpose built weighing machine to form part of a collection. Collections are packed using a specific gas flushing and vacuum packing system.
4. Individual cheeses previously sold separately have been developed into collections for unique positioning in salad counters of retail outlets.
5. The collections have varying tastes and colour and are novel in providing a convenienant value added function in pre-prepared salads.
6. 3 collections based on the criteria set in claim 1 have been developed. These include
The Irish Collection, The English Collection and The Continental Collection. The variety of cheese which could function in a collection is extensive, thus it is possible to extend the range whilst maintaining the function.
