A potato chip having a cross- section with at least five sides, preferably a hexagonal cross-section.

Description

SPECIFICATION Chipped Potatoes This invention relates to chipped potatoes.
Chipped potatoes are known in which the chips are elongate portions of potato having a square or rectangular cross-section. Such potato chips have a large surface area on which fat or oil may accumulate during cooking. Furthermore such chips tend to pack closely together during cooking with the result that one or more exterior surfaces of a chip is not exposed to the cooking medium.
According to the present invention there is provided a potato chip having a cross-section with at least five sides. Preferably a potato chip in accordance with the present invention has a hexagonal cross-section.
A chip in accordance with the present invention has a smaller surface area than a chip of the same volume but having a square or rectangular cross-section. Accordingly, there is a smaller surface area on which fat or oil may accumulate and the resultant cooked chip is likely to be less injurious to the health. In addition the chips are less likely to stick together in the cooking medium because the surface area of any one side is smaller than a chip of the same volume but having a square or rectangular crosssection.
Preferably a chip in accordance with the present invention has a thickness of from 1/8 to 2 More preferably the length of a chip in accordance with the present invention is at least A chip in accordance with the present invention may be cut from a potato or alternatively may be formed from reconstituted potato.
A potato chip in accordance with the present invention may be made by, for instance, inserting a hollow cutter having an appropriate crosssection, e.g. hexagonal, into a potato and then withdrawing it and ejecting the potato chip located in the cutter.
A device for forming several chips from a single potato may be similar to known chip forming devices except that the cutting members are shaped to provide chips with cross-sections having at least five sides, e.g. hexagonal. Such devices may be operated mechanically or electrically and may be manual, semi-automatic or automatic arrangements.
