Abstract

A method of manufacturing cocoa or chocolate comprises fermenting cocoa beans in a tank. A tank 1 for carrying out the method comprises an open upper portion 2. At least the lower portion 3 of tank 1 is provided with perforations 4. The volume of the tank is greater than about 60 to 80 litres. The tank is made of a material that is inert in regard to the beans, such as high-density polyethylene, or polypropylene. <IMAGE>
