Abstract

A device for sharpening an involute knife blade 190 of a slicing machine has a first member in the form of a pinion which is coaxially securable to the knife blade drive shaft. A second member 111 in the form of a longitudinal toothed rack 112 engages the pinion and has a sharpening mechanism 125 mounted at one end. The toothed rack can be moved pivotally and longitudinally with respect to the drive surface of the pinion whereby the sharpening mechanism follows exactly the involute contour of the knife blade cutting edge during the sharpening procedure. <IMAGE>
