Abstract

A concentrated food product, particularly a concentrated soup product, which is biologically stable without requiring extensive heat treatment but which is readily dilutable with water for consumption, comprises discrete food particles, flavoring, sufficient water to provide a total moisture content within the range of 45%-55% and water- soluble solids, especially salt, sufficient to provide a water activity below 0.85. The product is intended to be diluted with water, suitably with from 9 to 18 times its weight of water, prior to consumption.
