Abstract

Preserving food and liquids. - Foodstuffs, such as meat, fish, butter, margarine, fruit juices, vinegar, &c., are preserved by treatment with a solution of bromine or iodine in the presence of acid. When the food is acid, for' example vinegar, no acid need be added. The bromine &c. may be removed by a sulphite or thiosulphate, and the acid by alkali. In examples given, meat is treated with a solution of bromine in alcohol and hydrochloric acid, and vinegar with a solution of bromine in potassium bromide.
