Fixed trays.-Starch is dried in shallow trays carried on racks in a drying-chamber, preferably on a spider rack supported by a rotatable central shaft in a circular chamber. The chamber may be ventilated by a fan &c. and is conveniently, heated to 160-180‹ F. until the water content is practically eliminated.
