Preserving peas &c.-A tablet to be added to the water in which dried vegetables, such as green peas, are soaked prior to cooking, consists of sodium carbonate and bicarbonate and oil of spearmint, for the purpose of softening the water, restoring, developing, and preserving the colour of the vegetables, and imparting the required flavour.
