Coffee &c., making apparatus.-Infusions of coffee tea, &c. are prepared by mixing the material with water at 5-20‹ C., and then slowly heating to 60-70‹ C., preferably by means of steam or internal heaters, so that the alkaloid compounds are not decomposed, injurious substances are not dissolved, and loss of aromatic substances is minimized. One form of apparatus suitable for carrying out the process comprises a vessel a, Fig. 1, containing water and supporting a vessel b containing the cold extract. When the extract is sufficiently heated, the plug d is removed, the vessel b is inverted upon the flange f, and the extract is run through the filter &c. e into the vessel a or into another vessel. The heater A may be made of such a size that it will contain only enough fuel to bring the water in the vessel a to boiling. In a modification, the vessel b fits into the vessel a and is provided with a filter and cock at the bottom. The vessel a is provided with a cock to ensure that the water shall not reach to the vessel b, and the apparatus may be so constructed that the issuing of steam from the lower pot indicates that the extract has reached the desired temperature. In another form of apparatus, the extract is contained in a vessel with a tap at the bottom and heated by an internal heater, such as an incandescent lamp, contained in a vessel which may hold water, oil, &c. In the apparatus shown in Fig. 4, the heating-water is contained in the lower part of a pivoted spherical vessel q which supports a vessel s containing the extract. When the water boils, it is forced up the tube u and, falling on the cover v, inverts the vessel, thereby mixing the extract and the hot water, and releasing the lamp cover y, which then extinguishes the flame.
