Abstract

13,266. Craveri, J. June 11. Preserving meat.-Meat is preserved by the injection of a preservative liquid into an artery of the carcase after first allowing the blood to flow out. The preservative solution consists of sodium chloride and acetic acid dissolved in sterilized water ; or solutions capable of generating acetic acid and sodium chloride may be employed. A small amount of potassium nitrate may be added.
