Beer, preserving.-Beer, before sterilization, has deleterious volatile matters removed from it by subjecting it to a vacuum, or by passing an innocuous gas such as carbonic-acid gas through it, or by subjecting it successively to a vacuum and the passage of a gas. The apparatus employed may consist of a vessel provided with stirrers, and with a casing which serves for the passage of heating or cooling substances, and the vessel is also connected with a vacuum pump, and with a supply of carbonic-acid gas.
