Fish, dressing.-In a machine for heading,. cleaning and boning fish in a continuous series of operations, the fish are placed individually on shoots 7, on a rotating frame 5 which carry them past heading-disc knives 11, 12 and deposit them on a conveyer 13. Clamping-devices 19 grip the tails between horizontal rotary discs 16, 17 on which the fish are carried past a guide 59, which bends the fish backwards and break the backbones; belly-slitting knives, a spreading-plate for pressing the sides of the fish against the disc 16, 17, a brush 27, a backbone removing knife and a wiper 58 which ejects the fish after the clamping device is released. The shoots 7 co-operate with guides 6 and positioning abutments on the table 2 which is cut awav to allow the fish to fall on the. conveyer 13. The discs 16, 17 have mutually obtuse peripheries and are spaced by a disc 18, the discs 17, 18 being cut away at intervals to allow the treated fish to be ejected by the wiper 58. The clamps comprise spring-pressed levers 19 which project through the disc 16 and are released by rails 21. A guide rail 26 centres the fish before it engages a pointed slitter 23 which co-operates with a double disc knife 24 and the spreader 22 to slit the belly, eviscerate the fish, and spread the sides. The fish may be cashed by a water jet before brushing. The brush 27 is driven through gearing 48, 49, 53, 56 and the disc 16 by gearing 48, 49 and a wheel 50 which gears with a toothed ring on the disc. The backbone remover is carried in a pivoted block 30 and is moved into and out of the cutting- position by a rail 37 on the disc 16, a lever 85 and a spring 57. The knife 28 has two scooplike cutting-edges, between which a spring- controlled member 32 is situated. During the cutting, the member 32 is situated within the knife and ploughs out the backbones, and on the knife retracting the shoulder 33 slides on the face 34 causing the member 32 to project and eject fragments. The backbone remover may be held permanently out of operation by a lever 38 which engages an arm 47 on the shaft 29.
