Jet apparatus ; rotary stirrers.-A butter-making apparatus comprises a chamber 12 into which heated milk is pumped through nozzles so as to drive a re-action wheel and to became aerated. The wheel drives a stirrer, and from the chamber the milk passes to a churn wherein the butter or cream is separated and from which the buttermilk flows away. The apparatus shown comprises two reciprocating pumps 1, 2, Fig. 2, which force the milk, heated preferably to about 30‹ C., past an air chamber 9 to a ring 10 with nozzles 11; the milk strikes the hemispherical cups 15, Fig. 4, of the reaction-wheel 14, is thus aerated, and is stirred by the blades 17 on the shaft 13. The fat particles become separated from the buttermilk wherein they are in suspension, and the treated milk passes through apertures 18 to an annulus 19, and thence through a pipe 20 to a churn 21. Fig. 5, which contains, on a shaft 22 blades 23 with apertures 24. These are oscillated, by a cable 26 passing round a pulley 27 and attached to the rocker bar 5 of the pumps 1, 2, and agglomerate the butter particles; the buttermilk flows off through the passage 25. If the milk be treated at, for example, 15‹ C., whipped cream mixed with buttermillc may be collected at the end of the passage 20, or the liquid may be run into the churn 21, the blades 23 being removed or kept still, whereupon the cream separates from the buttermilk, which flows out through the passage 25. The Specification as open to inspection under Sect. 91 (3) (a) states that air may be pumped into the jets of milk. This subject-matter does not appear in the Specification as accepted.
