Abstract

1499849 Clarifying vinegar, fermented beverages SMEDLEY - HP FOODS Ltd 11 June 1976 [22 July 1975] 30690/75 Heading C6E A method of removing haze precursors from a vinegar or fermented beverage and then maturing it comprises the steps of filtering the vinegar or fermented beverage to remove solids, the vinegar or beverage immediately before filtration being in a raw stage, passing the filtered vinegar or beverage through a clarification tower containing an ionexchange resin material in hydrogen form and maturing the vinegar or beverage, and in the method a) the resin material is a gelular strongly acidic cation exchange resin of a sulphonated styrene-divinyl benzene copolymer having 8% divinyl benzene by weight, and b) the clarified vinegar or beverage is transferred without further resin treatment to a vessel used solely for maturation i.e. does not contain beechwood, and is matured therein. The vinegar or beer may be passed downwardly under gravity through a bed of the resin material in bead form. The resin is regenerated with sulphuric acid. The Examples are directed to the treatment of raw vinegar from grape wine, raw vinegar from malted barley and raw light beer, respectively.
