Abstract

1494856 Hydrolysis of proteins AFP CONSULTANTS Ltd 4 Aug 1976 [6 Aug 1975] 32875/75 Heading C3H A process of treating a protein-containing material comprises mixing together the proteincontaining material and an acid, the amount of acid being in excess of the stoichiometric amount required to completely convert the protein into its amino acid constituents, heating and agitating the mixture at atmospheric or greater than atmospheric pressure, recovering acid from the hydrolysate liquor before or after removing insoluble material from the mixture, partially or completely neutralizing any residual acid in the hydrolysate liquor, and recycling the recovered acid, the recycled acid being mixed with fresh protein-containing material. The hydrolysate liquor may be neutralized to a pH of 3À5-7À0. The acid used is preferably hydrochloric acid, sulphuric acid or phosphoric acid. The neutralization is preferably carried out by using sodium carbonate or sodium hydroxide. Sodium chloride may be added either before or after the hydrolysis. Apparatus is described for carrying out the process either batchwise or as a continuous process.
