Abstract

A protein-rich beverage which is intended as a food, is storage stable, possesses a pH of 4.0 to 4.5 and contains between 5 and 7% by weight of solid tomato components and between 10 and 20% by weight of solid components; the beverage is obtained by mixing the solid components in water and adjusting the mixture to a pH of 4.0 to 4.5 using only citric acid.
