1473208 Mayonnaise and salad dressings CPC INTERNATIONAL Inc 7 Oct 1974 [31 Oct 1973] 43411/74 Heading A2B Mayonnaise or salad dressing includes a non-minterised partially hydrogenated polyunsaturated oil, which in its unhydrogenated state does not exhibit clouding in less than 5¢ hours at 32‹F, the hydrogenation of the oil being carried out at 250-375‹F. The oil is present in sufficient quantity that the mayonnaise does not deteriorate in 24 hours at 15‹C. The oil may be soybean oil, safflower oil, dewaxed corn oil or dewaxed sunflower oil, and may have an iodide value of 100-125.
