Abstract
1466388 Coffee preparations, &c GENERAL FOODS CORP 14 June 1974 26564/74 Heading A2B A dipeptide, e.g. L-aspartyl-L-phenylalanine methyl ester, is added to a coffee product including low-grade coffee e.g. Robusta or Paranas or other bitter edible material, in an amount sufficient to repress the bitter flavours, but less than the amount required to produce a sweet taste. The dipeptide may be added to roasted and ground coffee during quenching, it may be added dry to the roasted beans, sprayed in solution on to coffee grounds, added to a coffee extract and co-dried therewith, or sprayed on to the dried extract as an aqueous solution or emulsified with coffee oil, e.g. during plating. The preferred concentration is 0.0025 to 0.016% dipeptide based on the coffee brew.
