Abstract
1447908 Food preparation A E STANLEY MFG CO 4 April 1974 [10 Aug 1973] 14950/74 Addition to 1387282 Heading A2D [Also in Division C3] A hydroxypropylated, epichlorohydrin crosslinked waxy maize starch derivative (see Division-C3) useful as a thickener in sealed container retart media, e.g. in canned pie fillings, soups, sauces, and puddings utilizing hightemperature, short-time sterilization continuous retart equipment or static sterilizers requiring good heat penetration, allows rapid heat penetration while thin to facilitate product sterilization in the sealed container and then thickens rapidly to the desired viscosity. In the Examples the starch derivatives are used to prepare sterilised, canned blueberry pie filling from blueberries and other ingredients, and cherry pie filling from cherry juice, cherries and other ingredients.
