Abstract

1438652 Hydroxyphenyl-ethyl alkyl ketones SHELL INTERNATIONALE RESEARCH MAATSCHAPPIJ BV 17 July 1973 [19 July 1972 15 Sept 1972] 33811/72 Heading C2C Compounds of Formula I (in which R is alkyl) are prepared by hydrolysing a compound of Formula II (in which R<SP>11</SP> is alkyl), the compound of Formula II having been prepared by either (i) reacting 4-hydroxybenzyl alcohol with a compound of formula RCOCH 2 COOR<SP>11</SP> in the presence of a base, or (ii) reacting phenol with a compound of Formula IV in the presence of an acid. In the case of reaction (i), the compound of formula may first be reacted with a strong base and the resulting enolate salt be reacted with the 4- hydroxybenzyl alcohol. 4-Hydroxybenzyl alcohol is prepared by reacting phenol with formaldehyde in the presence of a base and subjecting the reaction mixture to extraction with a mixture of benzene and light petroleum to remove unreacted phenol and unwanted 2-hydroxybenzyl alcohol. Compounds of Formula IV are prepared by reacting a compound of formula with aqueous formaldehyde. Compounds of Formula I are useful as flavourants.
