Abstract

1418311 Preserving fatty compositions UNILEVER Ltd 12 Feb 1973 [14 Feb 1972] 6685/72 Heading A2D [Also in Divisions C5 and G1] An aqueous emulsion (oil-in-water or waterin-oil) of 3 to 85% by weight of a fatty phase comprising triglycerides containing radicals of polyunsaturated acids has its keeping qualities improved by an enzyme system comprising alcohol dehydrogenase and a proton-donating coenzyme. The amount of enzyme system is enough to reduce the content of nonanal added to the emulsion to not more than 75% of its initial value, when tested by a procedure described in the specification. The emulsion may be a margarine or a low-fat spread. The co-enzyme may be a reduced form of nicotinamide-adenine-dinucleotide or nicotinamide-adenine-dinucleotide phosphate. The aqueous phase has a pH of 4-7 and may be milk. The emulsion may be made by mixing the enzymes with the aqueous phase or part of it before emulsification. Oils used in the Examples are (I) a blend of autoxidized sunflower oil with an interesterified blend of hydrogenated palmkerneloil and hydrogenated palm oil; (III) similar to Example I but with the autoxidized sunflower oil replaced by a blend of refined sunflower oil and refined soyabean oil; (IV) similar to Example III but with the soyabean oil replaced by refined safflower oil; (VIII) autoxidized maize oil. Emulsifying agents that may be used are partial fatty-acid glycerides, phosphatides and egg yolk. The aqueous phase may also contain salt, acid, proteins or flavours.
