Materials and compositions for making beverages.-In dealcoholizing beer &c. by distillation under reduced pressure, the vapours are treated to separate pure alcohol, the higher boiling portions are returned to the beverage and the lower boiling portions are either oxidized to form acids, which are added to the beverage, or are removed. The dealcoholized beverage is carbonated and cooled. Beer &c. is drawn into a heater A in which it is heated to 140‹ F. and then into a fractionator B where it boile under the reduced pressure. The mixture of liquid and vapour is passed by pipe B' into a column still C, heated at its base C' and surmounted by a dephlegmating column D, and by dephlegmators E, F which are supplied with cooling liquid. The higher boiling liquids which impart taste, flavour and aroma to the beverage are separated from the alcohol vapours in the dephlegmators and pass into the base of the still. Oxygen may be passed into the base of the column D, and copper screening may be arranged between the plates to act as catalyst for the oxidation of the lower boiling portions to form acids which pass into the residue. Alcohol vapours are drawn through a pressure-regulating valve in the head F and are condensed in a dephlegmator G, rectifier G<1> and dephlegmator H. The uncondensed vapours are withdrawn and reduced pressure maintained in the whole apparatus by a pump K. The dealcoholized residue is withdrawn from the base of the still C by a pump L, carbon dioxide is added from a pipe M, and the mixture is passed through a cooler N. Water of condensation from the coil in the base of the still may be used to dilute the residue. The fractionator B, still C, dephlegmator F, and the cooler N are fitted with thermostats.
