1380891 Meat carcass treatment SWIFT & CO 24 May 1973 24900/73 Heading A2D A method of chilling carcass meat to reduce the shrinkage loss attributable to the moisture evaporation from freshly killed animals so as to maintain the freshness and bloom of the meat and reduce the bacteria count thereof comprises spraying the carcass with an antibacterial solution containing chlorine in a chilling chamber sufficiently to reduce the bacteria count but not to affect the soleability of the carcass and thereafter intermittently spraying the carcass over a period of time less than normally required during the chilling period, and removing the carcass from the chilling chamber. The chlorine spray solution may contain 50 to 200 ppm of chlorine. The solution may be applied at 20-40 mins intervals for a spray interval of 40-110 secs.
