Abstract

1376074 Coffee-infusing MIKO PVBA 17 Jan 1972 [7 Dec 1971] 2191/72 Heading A4E [Also in Division B8] A process for the preparation of coffeeinfusion comprises introducing a quantity of roasted and ground coffee into a cartridge between two filter paper bases and pouring hot water onto said cartridge and includes the preliminary steps which consist in (a) taking for the infusion a weight of coffee (G gm) which with a tolerance of 8% is given by wherein K is 2.87 gm<SP>2</SP> min. cm<SP>-7</SP>, T is the cup value of the infusion (cm<SP>-3</SP>), Av is the sum of the maximum density value of at least two reference areas in a spectrogram of the roasted and ground coffee, V is the desired volume of the infusion (cm<SP>3</SP>), N m is the grinding index of the coffee (gm. cm<SP>-2</SP>), Pm is the maximum pressure build-up in the cartridge (cm. H 2 O) and td is the total infusion time (min) (b) choosing the dimensions of the cartridge so that the thickness of the layer of coffee therein is between 6.5 and 13 mm and the ratio of volume of coffee to inner volume of cartridge is 0.60Π0.05 and (c) choosing the filter paper material of the upper wall of the cartridge so that its capillary pressure is equal to Pm minus the highest water pressure obtainable on said upper wall. The two reference areas for determining Av correspond to chlorogenic acid and caffein trigonelin. The cup value (T) is determined by submitting a sample of the infusion to steamdistillation, collecting the volatile constituents in dichromate ion/ sulphuric acid solution and titrating with a standard ferrous sulphate solution using ferroin at a pH#0. A filter-package for use in the process comprises a cartridge 1, with upper wall 2 and lower wall 3, which walls are fastened to an annular wall 4 which constitutes a water receiving vessel. Ground coffee 6 is confined within the cartridge 1.
