Abstract

1374427 Measuring water content NEWPORT INSTRUMENTS Ltd 8 March 1972 [5 May 1971] 13226/71 Headings G1N and G1S The water content of a material containing organic hydrogen is determined by mixing a sample of the material with a quantity of heavy water so as to allow hydrogen-dueterium exchange to occur, separating the mixture into an aqueous phase and a non-aqueous phase and determining the hydrogen content of the aqueous phase. The hydrogen content may be determined by infrared spectroscopy, mass spectrometry or by N.M.R. The material may be a fat, and the heavy water may be acidified with hydrochloric acid to a pH of 1 to 2 to suppress ionization of fatty acids in the fat. If N.M.R. is used to determine the hydrogen, a paramagnetic salt such as Cu (NO 3 ) 2 .3H 2 O or a soluble salt of the "d" block transition metals (e.g. manganese, copper, iron, cobalt or nickel) is added to the heavy water to reduce the proton relaxation time. The hydrogen content of the heavy water is preferably determined both before and after contact with the material, and the increase in hydrogen content is a measure of the water content and may be compared with a calibration curve. The material may be margarine, butter, mayonnaise, groundnut cake, milk powder or animal feedstuffs.
