Abstract

1369438 Diglycerides UNILEVER Ltd 10 Nov 1971 [13 Nov 1970] 54118/70 Heading C2C A 1,3-diglyceride is produced by maintaining a 1,2-diglyceride in the solid state at above 20‹ C. until the weight ratio of 1,3 to 1,2 isomers is greater than 6 : 1. The temperature is preferably within 20‹ C. of the initial m.pt. of the system. The diglycerides are preferably of straight-chain C 4-24 fatty acids, e.g. palmitic, stearic, oleic, capric, caproic, and mixtures thereof. The 1,3-isomer may be isolated from the mixture by crystallization from hexane. The diglycerides may be prepared e.g. by reaction of glycidyl stearate with palmitic acid in the presence of a quaternary ammonium catalyst. Triglycerides are prepared by esterifying the 1,3-isomer with a C 16 or C 18 acid.
