Abstract
1327761 Flavours; food mixes BUSH BOAKE ALLEN Ltd 3 Aug 1970 [1 Aug 1969] 38705/69 Heading A2B A granular or powdery solid composition comprises water-insoluble capsules each consisting of at least one water-soluble capsule encapsulated in a water-insoluble solid material, the water-soluble capsule comprising a flavouring ingredient comprising essential oil, encapsulated in a water-soluble solid material. The water-insoluble solid material has a m.p. substantially below that of the water-soluble solid material. The composition may be prepared by spray drying an aqueous emulsion containing the flavouring ingredient and the water-soluble material to form water-soluble capsules and then either spray drying a dispersion of the water-soluble capsules in a solution of the water-insoluble material in e.g. benzene or petroleum ether, or spray cooling a dispersion of the water-soluble capsules in melted waterinsoluble material. The flavouring ingredient may comprise lemon oil or cinnaman oil and cinnamon oleoresin. The water-soluble solid material may be gum acacia, starch, chemically modified starch, alginate, gelatin and casein. The water-insoluble solid material may be a hardened vegetable oil, glyceryl monostearate and stearic acid. The composition may be used in bakery mixes which may comprise oatmeal, milk, butter or margarine, egg, yeast, baking powder and flavours e.g. salt, sugar cocoa, fruit and nuts.
