Abstract
1317537 Foamed milk products; yoghourt COMPAGNIE GERVAIS-DANONE 18 Feb 1972 [19 Feb 1971] 7707/72 Heading A2B [Also in Division B1] Food products, such as stabiliser-containing milk products, are foamed by heating the product, and pumping it through a pipe while injecting a gas into the flow in the pipe, the mixture passing through means for mixing and cooling the gas and the product, the pressure difference between the exit of the mixing and cooling means and the point upstream of the gas injection point being maintained substantially constant. An apparatus comprises a store for the hot product, a high pressure pump therefor, a gas injection nozzle located downstream of the pump, the gas being injected at a pressure higher than that of the product, means for mixing the gas and the product and for refrigerating the mixture, a back-pressure valve being located downstream of the mixing means and controlled by a pressure detector upstream of the gas injection nozzle and the mixing means.
