[Also in Divisions C1 and C6] A beer flavour for use in foods and beverages, e.g. chewing gum, bakery products, soft drinks, malt beer or unfermented malt wort, is obtained from yeast-containing waste products of a beer brewing process. The flavour may be mixed with alcohol before use. The flavour may be obtained by distilling off the volatile substances from the waste products, separating the alcohol content of the volatile substances from the oily flavouring substances by use of an absorber comprising an upper layer of oil and a low aqueous layer containing e.g. sodium chloride or acetic acid, and oil layer by frictional distillation. Alternatively the flavour may be solvent (e.g. paraffin oil) extracted from the waste products and separated from the resultant solution by fractional distillation. The waste products may be compressed into cubes and remoistened prior to removing the flavour. The waste products after distilling off the volatile substances may be dried and used as animal fodder or fertiliser.
