[Also in Divisions C2, C3 and C5] Hydroxylamine compounds of the general formula:- (wherein R 7 and R 8 are C 1-3 alkyl, benzyl, chlorobenzyl, nitrobenzyl, benzhydryl, or triphenylmethyl, provided that (i) only one of R 7 and R 8 is alkyl, and (ii) that R 8 is hydrogen when R 7 is benzhydryl or triphenylmethyl; or R 7 and R 8 together with the nitrogen atom form a morpholino, piperidino, 2,2,6,6-tetramethyl piperidino or piperazino group) are anti-oxidants and useful in stabilising foods containing or prepared from animal fats, e.g. potato chips, fried fish, do-nuts, crackers, pastries and cakes, also other foods, e.g. salad dressings, vegetable shortenings, and animal feedstuffs such as fish meals and fortified feeds. The anti-oxidants are normally present in a concentration of 0.001-5.0% by wt.
