Abstract

1,233,256. Proving cabinet. FOSTER REFRIGERATOR U.K. Ltd. 21 Nov., 1969 [25 Nov., 1968], No. 55888/68. Heading A4D. A cabinet 1 for retarding and promoting the proving of dough consists of two inner compartments 2 and 3 separated by a partition which houses heating coil 11, the use of which promotes proving, refrigeration coil 12 which retards proving, drip tray 13, boiler tank 14 and fans 8 and 9. Three-way switches 43, 55 and 62 in an electrical circuit operate heating, refrigeration and humidity effects respectively through the activation of coils 47, 65 and 57 which produce heating effects in the coil 11, and water boiling element 23, and the opening of the refrigeration cycle respectively. The desired coil may be activated by manual operation of the respective switches or by a timing device 49 which operates further switches 51, 60. Temperature and humidity are maintained constant by means of a thermostat 46 and a humidistat 68. Steam issues from a hole in the water boiler tank, where the water level is kept constant by a float operating an input valve by means of a micro-switch. The fans 8 and 9 induce an air-water vapour mixture from compartments 2 and 3 over heating and cooling coils 11 and 12, and then back into the compartments.
