Abstract
1,225,139. Soybean compositions. GRIFFITH LABORATORIES Ltd. 13 Dec., 1968 [18 Dec., 1967], No. 59374/68. Heading A2Q. A substantially dry edible soybean composition, which is palatable, debittered, substantially water-insoluble and has enhanced protein, is produced by waterretraction of toasted soybean grits. The toasted soybean grits are preferably those known as Nutrisoy 10-40 having 7% by weight soluble protein based on the total protein, a moisture content of 7.2%, a pH of 6.5, and containing 58.9% protein on a dry basis. In a commercially applicable example, 500 pounds of Nutrisoy 10-40 were suspended in 500 gallons of water and the product was agitated for 30 minutes and pumped to a centrifuge. The cake was washed with 100 gallons of water in the centrifuge basket. A second wash was used. The insoluble soybean protein material was then dried in a fluid bed drier which had an inlet temperature of 470‹F., an outlet temperature of 225‹F., and a feed rate of 100 pounds/hour of the wet product. The resulting composition had a moisture content of 7.6%, and a protein content of 68%, the percentage protein on a dry basis being 73.5%. The mesh analysis of the composition was: on a 10 mesh screen - 3.6%, on a 20 mesh screen - 34.6%, and on a 40 mesh screen - 59.8%. The product may be added to ground meat on the basis of 5 pounds to 100 pounds of meat with an additional 15 pounds of water, or may be mixed with other soybean compositions prior to adding it to ground meat.
