In the coagulation of milk to form curds, the coagulation is effected continuously in the presence of coagulating agents in the midst of a permanent turbulent flow, a mixture of curd granules and whey being formed directly without any intermediate gelling phase. Preferably previously formed curd granules are also present. The milk may be subjected to low pressure homogenisation, at above the melting point of butter fat, prior to treatment.
