Abstract
118,535. Melhuish, W. J. Dec. 10, 1917. Butter substitutes.-In preparing artificial milk from soya beans as described in Specification 24572/13, the beans are soaked in water before being ground. An albuminous extract is prepared by mixing the meal and water in a steam-jacketed pan fitted with cone-shaped cup stirrers open at both ends. The same pan, exhausted of air, is used subsequently to mix the extract with sugar and fat, sesame or arachide oil being used to prepare milk for ordinary purposes and coco-nut oil to prepare a milk for margarine-making. The emulsified mixture is treated with a culture, and pasteurised. Acids such as butyric or citric acid, or substances such as lime, magnesia, or bicarbonate of soda may be added.
