A process for the production of #<SP>1</SP>-piperidine- 2-carboxylic acid comprises reacting a microorganism belonging to the species Proteus mitajiri, which is capable of decomposing L-lysine, with L-lysine in an aqueous nutrient medium under aerobic conditions and accumulating and recovering the said acid from the resultant fermentation liquor. The specific microorganism used in the examples is Proteus mitajiri ATCC 21136.
