1,175,398. Preparing frozen, eviscerated fowls for stuffing and packing. SWIFT & CO. 27 Nov., 1967 [19 Dec., 1966], No. 53789/67. Heading A2U. To facilitate the insertion of stuffing into the cavity 12 in the frozen carcass 10, Fig. 1, of an eviscerated fowl, such as a turkey, chicken, duck or goose, a tube 16, preferably having a flange 20 at its outer end, is inserted, through the anus 14, into the cavity 12. A bag 18 containing the giblets and neck, which have been previously removed from the fowl, may be placed in the tube 16, and the frozen carcass may then be packed, e.g. wrapped in plastics film or netting, or enclosed within a plastics bag or net. In order to prepare the frozen carcass for cooking it is removed from its package, the bag 18 is removed from the tube 16 and the stuffing is then stuffed, through the tube 16, into the cavity 12. The tube 16 may be made of tin, aluminium, stainless steel or plastics material such as polypropylene, which can withstand cooking temperatures between 350 and 450‹F,. e.g. plastics material having a melting point greater than 450‹F. In the embodiment shown in Fig 2, the tube 16<1> is perforated and extends substantially through the whole length of the cavity 12<1>. The inner end of the tube 16<1> may be closed or open. When the inner end is closed, stuffing is stuffed only into the tube 16<1>. The outer end of the tube 16<1> may be provided with a flange 201. A cap or cover may be fitted over the flange 20, 20<1>.
